Pumpkin Chocolate Chip Muffins

We were battling colds and decided to bake! It was so worth it!  Pumpkin season is coming to a close.  A great way to finish the season is with some super yummy pumpkin muffins and hot tea.  We added semisweet chocolate chips to make them even more tasty!

SUSHI-FEST & FROYO

Sometimes it's just good to spend time with just one kid..

When you have multiple kids, it can be hard to get that one-on-one time.  Sometimes it's just good to take one kid out and give them a special time.  We dropped the younger two and hung out with our super cool godmother one evening for sushi and froyo.  
Sushi is a Japanese food of raw fish and vinegared rice. We obviously had "western sushi" (rolls), not traditional Japanese sushi.  Our meal consisted of california rolls, shrimp, tuna and salmon rolls.  Some rolls had tempura.  Tempura is battered seafood or vegetables.  
Taking hold of my adventurous side, I decided to try mussels, one of my least favorite foods to look at. You only live once, may as well live it to the max!  These were cooked (thankfully). Not sure if I'll ever try the "uncooked" version.
Our fun evening concluded with one of our favorite desserts... froyo. Froyo is short for frozen yogurt.   One of the original frozen yogurt places I remember growing up was "TCBY" (http://www.tcby.com).  There are so many different kinds of froyo places.  But honestly they all have frozen yogurt, they all have "mix ins" and they are all weighed by the ounce.  The cool flavors and crazy "mix ins" or toppings make the experience super awesome and provide thousands of potentially different varieties.  Our froyo place had board games and awesome music which made for a really great evening.

Fun + Food = Jell-O


Jell-o is a fun and quick activity that is a lot of fun for kids.  They love mixing the 3 simple ingredients and they LOVE looking forward to the cold snack that awaits them after all of their "hard work".

BELL PEPPERS: A Rainbow of Benefits

Besides cooking and visiting restaurants, we LOVE trying out new foods.  Below you can watch what we thought of bell peppers... 

We really encourage everyone to give bell peppers a try.  They are rich in vitamins A, B6, C, Lutein, Beta-Carotene, Lycopene.  They also have fiber and folate... what's not to love???

Encouraging kids to try new things early in life is a great way to promote their innate curiosity.  It also allows them the opportunity to give their opinion.  

Discovery is a large part of mental growth and development.  Providing opportunities for young kids to experience big concepts in small ways is key to creating curious and courageous global citizens.

A Tribute to the Trini

This is an adjustment on a Caribbean theme... Sorrel.  I LOVE Hibiscus (Sorrel) it's amazing.  You may not know this but all of the Celestial Seasonings zingers are hibiscus teas. Check out my favorite RED ZINGER here:

So we switched it up a bit and added Pomegranate, Lemon & Ginger Powder... not disappointed at all!!!! Hot or Cold... it's awesome.


Original Sorrel Ingredients:

  • Hibiscus Leaves
  • Water
  • Sugar
  • Allspice
  • Cloves
  • Cinnamon 
  • Ginger
Our Sorrel Ingredients:

  • Hibiscus Leaves

Breakfast is always a fun & easy meal to get kids involved!

One of our favorite things to eat is breakfast!  One of our favorite things to make is compote. It's a really simple alternative to syrup!  We paired our meal with sausage & chamomile tea!  Enjoy!
